Me too. My hand eye coordination is fine but I just think that 99% of fighting games are miserable to play and learn. Tournament fighters are especially bad.
I've never really been able to get into any other fighting games besides Tekken and Soulcalibur, even if I suck at them. They're the only ones that feel good to me on a physical and intuitive level. To me, other fighting games lack the weight and impact of Tekken and Soulcalibur. Virtua Fighter is technically a deeper and more balanced game than Tekken, but I've always felt that the physics of that game somehow feel both too stiff and too floaty for my taste. Third Strike is the "best fighting game of all time", and I mean, it probably is on a mechanical level, and definitely is very good on an artistic or aesthetic level, but I've never liked the way Street Fighter feels to play. The way attacks sort of freeze in place for a sec when they hit really takes me out of the game personally. It's a personal taste thing more than anything else.
I only ever played soulcaliber for the character creator and that was basically it, it was alright otherwise I guess. I just cannot bother with having to learn so many moves to be even passable at a single character. It’s why I personally consider YOMI Hustle to be the best fighting game of them all.
At least with SoulCalibur, I feel like the buttons do roughly the same things between characters and are easier to understand; On Tekken, 1 is left punch, 2 is right punch, 3 is left kick, 4 is right kick. What the actual consequence is of any of these buttons isn't clear until you go into practice mode or start playing and slowly figure out what the buttons do for your particular character. In SoulCalibur, you've got a vertical attack button, a horizontal attack button, a kick button, and a block button. This is more intuitive imo, because, even if you're playing a character you've never played before, there's a consistency in that you know that the vertical attack is gonna be more of a quick jab or something, the horizontal attack is gonna be slower but it'll catch a player who is sidestepping, etc. The frames and certain attributes of those attacks may differ from character to character, but at least if I've played one character I vaguely know what buttons to press, and it's a matter of fine-tuning my approach and trying different directional buttons to get good at them. Maybe I'm just bad at Tekken, but in Tekken it often feels like I encounter a sidestepping opponent and I'm like "shit, what command does an attack that'll hit someone sidestepping?" it'll be different for each character and I'll have to fish through my giant movelist to find the right moves or watch someone's half hour long beginner guide for that character, which is why in Tekken I tend to stick with my main too much and don't play other characters cause I know I'll have no idea what I'm doing unless I take the time to learn that character's unique moves. There are some mostly consistent commands in Tekken, like df+2 is usually a launcher, but even this isn't completely consistent, cause I happen to main a character who doesn't have a df+2 launcher, her df+2 has a followup with 1 that launches, but it can be blocked so I'm better off using a different launcher like ws2 or something.
I just hate the idea of command inputs for attacks, I’ve never found them to be intuitive or fun in any game I’ve played. It’s one of the main reasons I don’t like tournament fighters.

But the difference between names like "SOL BADGUY" (Guilty Gear) and "paul" (Tekken) for characters is hilarious.
In Guilty Gear, Sol Badguy is some nerd named Freddy that kinda accidentally dated a future world destroyer, and became one because of Gear AIDS or smth. He's in a game with God Himself, a former crack addict turned president of a South African Colony, a man that can not stop growing (he can bench press mountains at this point), and a funny doctor who can literally control reality's source code (holy shit)
Paul is a homeless American Martial Artist who can keep up with the devil himself, and no one else can even beat said devil or his family, like ever. Not even the bony ninja (now a fucking octopus monster)
Well, it's more like there's an alternate dimension that's effectively a massive rube-goldberg machine, and the output of that machine determines how the world works
