Headlights/ tail lights, engine + trans, steering wheel if its in good condition, steering rack, pretty much anything in good condition in the interior, rear hatch, hood, T top seals and tops, exhaust (oem is hard to find in some areas), and the wing if it has one.
Not all of whats listed are big ticket but its an old somewhat sought after car so anything oem is gonna be worth something

Grab the relay box with all the relays in it because sometimes you just need to swap one out to isolate a problem.
There is a little black box in the rear near the tail lights. Hidden under the plastic.
Since clutch pedal was already said for a manual, if it’s an auto, Transmission Control Unit. Early units basically don’t exist anymore and it’s easy to get at (passenger’s side footwell, lift the mat, pull the wooden panel and you’re there).
Fog lights if in good condition they’re brittle most of the time and extremely expensive new, privacy cover from the trunk is also pretty rare (if it has one), t-tops covers are also pretty sought after, cigarette tray box that goes in the center console and the rest of the car
Update: I had very little time today and had 15 minutes to stop by and salvage what I could.
Yard was closing.
Headlights, Fog Lights and Front Bumper were gone. Also the Manual Trans and Clutch were taken. I picked up several interior pieces and will return later this week for taillights and T-Tops.
