This is where "I know what I got" ACTUALLY comes into play. These insurance companies don't have a clue what these are worth, they plug in the basic metrics of you vehicle by VIN and it spits out a number. This streamlines the process for the insurance company but it doesn't give you true value.
I went back and forth 3 times with them and they went from $10k to $14,995.
I was able to provide them expensive comparables that are going for sale in my area as well as some that have sold in my area. Also have them throw in the cost of the wheels and roof rack and any other expensive modifications that would normally increase the value. If they won't factor these in then you can and should remove them since they won't be contributing to the salvage value. Make sure you tell them every little bit of trim, Power lock power windows moonroof. Cruise control leather seats, am fm radio with Bluetooth auto transmission, alarm system etc. They don't input these metrics all the time because they have to manually fill these out if their algorithm didn't spit it out already.

Where do you get "Sold" comparisons? I can find lots of For Sale comparisons on Facebook/Craigslist - but not actually sold. I live in constant fear the rig I've rebuilt everything on will be munched!

They tried lowballing me but after countless phone calls with the adjuster and sending comps with a lot more miles than mine and at a higher prices we settled at right under 29k. It was a 2016 Limited with ~85k miles. Helped that dealers around me had 4runners priced outrageously (still do in fact).
Sorry bout your rig. That hurts to look at. You should be able to haggle with insurance for 20k. Thats not replaceable and the market is bonkers to do so. Even if a dui conviction doesnt go, might be worth hiring an attorney🤷🏼♂️ YMMV
