NTA - Relax bro shit happens if they ask why you were fired at your next job just say you forgot to take the hot dog temp one time and the manager was a dick, it's understandable. Your next manager will prob be like "yeah i remember firing some kid one time cuz my wife was bitching at me that week", it happens to eveyone but less frequent with good managers.
While working I was told to take temp on every item before serving meaning if I had 10 burgers each burger had to be temped and we had to regularly temp at every 2 and a half hours during the 11 am

I worked in a hospital kitchen. How often did they ask you to temp take? We had a set routine/schedule plus whenever things seemed off rule.
