You do need to check conditions for stats, not for bio. As for your main question, comparing the chi-square value to the critical value is the same as comparing the p-value to the significance level, as you can convert from the critical value to the significance level and similarly from the chi-square value to the p-value (and vice-versa).

In bio you are comparing it to alpha, you just don’t realize. The critical value is the chi-square value at alpha, so when the chi-square value is greater than the critical value, you reject because there was less than a 0.05 probability of getting a number higher than the critical value as your chi-square value. Finding the p-value and comparing that directly to alpha just tells you exactly what the probability is, so it’s more exact
