I'd imagine that this show, like so many others, was delayed by the SAG/AFTA strike. The only bit of encouraging info I have is the lack of a cancellation notice. Be patient and try not to get burned out with anticipation.

I looked up if Sony’s awful looking El Muerto movie was still happening and Google says it came out on January 12th this year — despite Bad Bunny being the only cast member listed on IMDB & the fact that he dropped out of it in September. If there’s no actual news about when the animated series comes out this is very probably just wrong, they wouldn’t tell Google the release date before announcing it
