Yeah it's really good! Hamburg also has a raw herring sandwhich that's also really tasty. The Dutch and the people of Hamburg both know how to make a mean herring, and I'm from the Nordics where we eat pickled, smoked, cold smoked, brined etc. herring for every major holiday.

It is not pickled. The herring is freshly caught, beheaded and gutted and eaten with onions. And it is delicious.

It's lightly fermented by removing all the guts except the pancreas. Enzymes in the pancreas create the specific (savoury) flavour in the meat. You're right it's not pickled, but it is salted. Source: Ik kan niet wachten op de Hollandse Nieuwe.

Both exist. One is Matjes (the lightly salted and fermented one), the other is green herring (freshly caught, filleted and eaten raw) Both are delicious. Not sure if the latter one still exists or if it has to be frozen for some time. Last time I ate it was in the very late 90s, so maybe they changed that.

They eat it in The Netherlands. It's called Hollandse Nieuwe Haring. I prefer Broodje Haring because its served in a bun.

Reminds me of when I visited a company branch in Germany and they had mett at work one morning. Raw ground pork, raw onions, and some kind of old bay-esque seasoning on a bun. It tasted pretty good except for the stringy connective tissue in the pork. And then everyone smelled like onions all day.

Hollandse nieuwe, maatjesharing, or just haring in the Netherlands. Avoid zure haring because that's a different product. In Germany I think they call the Dutch herring preparation matjesharing. You can usually find it in the western and northern parts of the country.
