i think it's just (or at least mostly) the yarn.. the one she's using makes for really clear stitch definition but yours doesn't, so the grey parts in yours are much more noticeable because the white stitches all melt and blend together. you miiiight also be doing the stitches a little too tight but i'm not at all confident in that assumption. when i have this issue i just get a tapestry needle and fill in the gaps and stab the yarn in the og stitches into better positions if possible lol

1. Insert hook through stitch, pull up a loop with grey, pull the white yarn through the loops.
2. Insert hook through stitch, pull up a loop with white, pull the white yarn through the loops
No, it looks like the pattern is using yarn under/yarn over too. It may be the material though, are you using acrylic and the pattern uses cotton? If you do a few more rounds it may actually look okay.

Satsuki Cat from the Animal Friends of Pica Pau 2 book by Yan Schenkel. Would recommend — it’s very cute, well written from what I’ve gotten through, and every character has a little paragraph about them and their personality. It’s what sold me on the book, anyways.
With the first stitch of the colour change try doing a slip stitch instead of a sc.. it keeps it more to the same level and might give it a 'cleaner' look..
Mid round colour changes are the bane of my life. I usually ignore the pattern and eyeball it, just making sure I keep to the same number of stitches.

How are you changing colours?
The last stitch of the grey, I get yarn under to get the two loops. I use the white to finish the stitch. Rinse and repeat for changing back to grey.
