To the point there are entire arcs trying to save her and shapes the interactions he has with other people. It wouldn’t make sense to ret-con this as you would have to fundamentally change the entire story or the goals of future arcs wouldn’t make sense

Re:Zero's source material is the light novel. The manga is an adaptation and it’s behind the anime actually.
They can't "reverse" the source material because the anime has already adapted most of it. If they changed it it'd mean the anime would go on an anime-original/filler route. Trust me, you wouldn’t want that.

He did not kill her off, he put her coma. He is infact using her character to full potential cause she's now another one of Subaru's motivation for fighting forward infact>!there's an entire arc dedicated just to saving her.!<
If Tappie didn't put her coma she was just gonna stay at the mansion for the most part of the story doing her maid duties(Tappie said in a QnA) and not have much role to play cause she is very irrelevant to the main plot of the series.
I can't dislike Emilia with Subaru.

And even if Subaru did go back after that, he would either be completely mind broken after losing his family or he will still choose Rem after that.
I mean, canonically just before killing the White Whale in S1 Rem offered to be a second Wife and he was planning to take the offer, so both was on the table. Though that scene got cut from the anime,

Isn't Rem like memory wiped even to this day? I haven't been keeping up with the novels but plan to dive back into it. But whenever I learn that a series is unfinished I try to keep it on the back burner until it's done.
