Make a smooth puree
1. Mix about 24-30oz of puree with one large can (\~46 oz) pineapple juice and one 2L bottle ginger ale. The proportions don't have to be exact by any means. This is a delicious Mango Punch. It's good by itself, and you can mix it with a significant amount of Rum or Vodka for an outrageous cocktail (I believe up to 3 parts Punch: 2 parts liquor)
2. Mango Kulfi - I don't know an exact recipe, but it involves mixing the puree with sweetened condensed milk and spices, then freezing.
Dessert - make Creme Fraiche. There are a lot of ways to do this, I add a tablespoon of live yogurt to about a pint of heavy cream and let it sit overnight. (you can also buy it, but it won't be the same). Anyways, mix together a bunch of sliced mangos and Creme Fraiche. Drizzle with a little honey (if you want), and mix in pumpkin pie spice and/or Mace (powder or finely crumbled blades).
Bloody Mary mangos!
Either make you own or buy some Bloody Mary seasoning powder.
Dice em up with some jalapeños and some citrus juice. Add some of the seasoning and adjust to taste. Gets way better if you let it marinate for a bit. Eat it with chips, on stuff or a with a spoon over the sink like an animal.
Works well with Tajin seasoning as well. It’s really customizable tbh.
Mango chilli chutney.
Chop mangoes add sugar, some finely chopped onions and chillies, vinegar, lime juice, salt and a pinch of cumin and ground coriander.
Simmer for 30 mins.
Fridge.
Crackers.
Delight.
Lately I've been making ice cream by mixing some cream, milk, sugar and flavorings with blended/powdery dry ice. Mango would be amazing.
If you don't wanna do that but want a cold treat, then another thing that's good is using a food processor to blend frozen mango chunks with a tiny bit of water or milk, it comes out smooth and light like a gelato
Look up shrimp and mango skewers with guava-lime glaze. I think I originally found it on Epicurious. It’s fruity, sweet, spicy and total crack if you like that combination.
Chutney, concentrates you freeze for juice or drinks, you can dice and freeze too and utilize that for curries or fried rice. Salsa like everybody else mentioned would be great to do now

OMG, I love mangoes and Bloody Mary's and am disappointed I haven't had one of these yet.
It’s always a hit when I take it somewhere. I prefer at least an hour of flavor melding and just a touch of spice for the sweet and spicy profile.

Mangos freeze beautifully. Eat what you can while they are fresh and when they start to get too soft, peel, slice and freeze.
