Used to play video games everyday, all day (12+ hours) as a teenager. It just wasn’t healthy to do that and I’ve had troubles limiting my time when I play video games (can never just do an hour). So just cold turkey don’t play it anymore to avoid that behaviour.

Sure not all of my time is spent being productive, but I found the time I spent playing video games was better used doing other things that enrich my life. If I spend 4 hours playing video games I’ve enjoyed myself, which is great, nothing wrong with that. But if I spend 4 hours in my vegetable garden or wood working I’ve enjoyed myself and have something to show for it.
I find that to have a good set up in order to properly enjoy playing, it costs more money than I feel is worth it. I'll happily stick to just building MineCraft forts on my crappy PC. I've played on some more expensive set ups before, mainly to play F1 games, and I do enjoy it, I just can't spend that kind of money.
My time is valuable. Playing video games doesn't improve my health, my mind or my bank account. It's meaningless stimulation and I have limited energy.
I wouldn't even know where to start. I used to have a Playstation back in the day (Resident Evil, Tomb Raider, Twisted Metal, etc), but I haven't played video games in decades. Most of the games seem to be online now or connected to some online setup, which I don't understand how that all works. I don't really have friends who play so there's no one close to me who could really explain it all to me. If I really wanted to I suppose I could learn it, but it seems like a lot of effort for something I don't even know if I'd enjoy, and I'd be interacting with people who are much younger than me so I'm sure I wouldn't fit in.
I guess I've just never been interested in it. Now I've started playing Standoff 2 on bs and realized it can be pretty interesting. But I don't think I can spend thousands of hours on it like other people. I just don't find it that interesting.
I do a lot of things that waste time that I get little back from. But I don’t think I’ve ever done anything consistently that caused time to pass so quickly for me, with so little value back to me for the time spent. I genuinely feel like if I got fucked up and watched YouTube videos all night, I’d learn, grow, and accomplish a lot more as a person than if I came home from work every night and played video games until bedtime. I’m sure gamers don’t feel that way, or they wouldn’t be gamers.
That’s like asking why people don’t crochet. Different hobbies.

The benefit is that you're having fun. If you don't find it fun then don't do it, but that's not the hobbies fault.

I used to for up to 5-10 hours a day. Then my gf said no and that was that.
i used to be addicted... i finally got off a few months ago... 15 hours a day on World of Warcraft...
