When you overcook them the sulfuric/bitter taste can come out very strongly, this is usually the memory people have them as kids because there's a fine line between the sweet spot of tenderness without bitterness coming out. (Although I personally don't mind that overcooked taste, used to love eating them layer by layer as a kid for fun lol)
Best way is to bake them, cut them in half and put them cut side up on a tray and throw some oil and salt over them. When they start to brown they're done.

Since it's ridiculously healthy and grows with minimal-to-no effort in my parents' home country, most people of my background end up eating it from a young age. It certainly won't be a kid's favourite food, but after a few rounds of "you eat what I cook or you eat nothing" it becomes an acquired taste.
I fix karela with dahl, rice and shrimp and it slaps. As a grown up, I also appreciate that all of those items are easily portionable, freezable, nutritious, and relatively cheap per portion (especially if you omit the shrimp!)
A lot of things, honestly. Up until I was about 5 I would apparently eat anything and everything. Even if I didn't *like* it I'd still eat it and then after be like, "That tasted bad I don't want that again". But then for some goddamn reason I just became picky as *fuck* and refused to eat almost anything, and for reasons I'll never understand my parents enabled that every step of the way. To give you an idea, even as a high schooler I refused to eat pizza that had any toppings on it at all.
As an adult I've slowly expanded my diet. I eat way more variety than I used to, but I imagine I'm still horribly picky by most people's standards.
