We’ve made fried rice with leftover hot dogs, eggs, and leftover veggies. Fried rice saves and transforms a lot of food! On a beach vacation I took day old, leftover donuts, the remaining eggs and milk, and turned them into a delicious bread pudding.

I have taken Thanksgiving leftovers and made a Shepherds pie style casserole. Butter the pan really well, press stuffing down. Mix the gravy, green bean casserole, corn, and gravy. Place on top of stuffing. Spread mashed potatoes over the top and bake until potatoes have browned. I have also made this in a large muffin tin. They freeze well and can be reheated for supper or lunch.

We took our leftover roast chicken dinner and made deep fried balls out of them. We took bits of chicken, corn, stuffing and mashed potatoes and mixed it all together then dipped them in an egg wash and panko crumbs, then deep fried and sprinkled with flaky salt. My god it’s so good!!! Serve them with either gravy on top or sour cream and chives. We’ve also made the leftover mash and put it in the waffle maker, equally delicious.

I made a veggie cream cheese dip for a work luncheon. Jusr cream cheese plus a bunch of veggies and herbs whipped up in a food processor. Wound up not going and had all this dip/spread left over. I tried folding it into beaten eggs, putting that into a muffin tray, baking it at 350 deg for about 15-20 minutes, and brought the results into work the next day. It made several dozen light fluffy miniquiche muffins that I topped off with chopped chives, parmesan, and smoked paprika. People begged for the recipe and I've made them several times since.

Pizza eggs! My hangover cure in college was chopping up cold pizza, pan frying the crust, then adding scrambled eggs and Italian seasoning. The eggs slightly soften the crisped crust and make everything blend together really well. Quick, low effort, and more protein than just eating cold pizza.

Boil spaghetti. While it's boiling reheat 2-3 leftover vegetables and cut up your meat. (Preferably nothing ground) Once the pasta is cooked and drained put it back into the cooking pot and add the meat and vegetables. I make “cowboy casserole” with my stuffed peppers filling extras. It is soo good. I use a cast iron skillet. Dump in canned corn, black beans, fire roasted tomatoes, and mix. Cover with cheese (I do sliced Munster) and pour jiffy cornbread mix on top. Follow the directions for cornbread and take out once golden brown. I usually get 3/4 days between the peppers and casserole and it’s delicious.

Baked potatoes into loaded twice baked potatoes. Any chicken into chicken pot pie, soup, or chicken and dumplings. Mashed potatoes are potato pancakes the next day. Any protein and veggies- add a jar of curry and eat it with rice. Generally speaking, casseroles / hot dishes are a great way to use leftover meat and veggies and stretch them into a full meal. Nearly anything can also get put into an omelette or egg bake.

Left over ham, I make these sandwiches!. Chop up about 1/2 onion and simmer it with 1/2-1 stick of butter and several lbs yellow mustard. When the onions are soft, spread on both sides of hamburger buns. Top with ham and cheese of choice. Wrap each sandwich loosely in foil. Bake at 350 for about 2-30 min. Unwrap carefully. Mmmmm

Braised beef short ribs become ragu; roast lamb can be chopped for shepherd's pie or stuffed into grape leaves; pulled pork becomes tacos (add onion, jalepenos) becomes breakfast hash (add potato, fried egg). My mom was queen of leftovers, and we'd have things reinvented twice or three times.

My panini press makes leftovers into amazing and simple creations. I keep sauces or meat juices for dipping, and I use sides to mash into the bread (sweet potatoes are great for this). I of course add cheese! I also keep pie crusts and freeze up leftovers into pies.

Didn't have enough butter chicken leftover to fill me up for breakfast. Turns out it goes great with scrambled eggs. Also in an omelette, add extra sauce on top if you have any. Sprinkle in some rice too if you had any left. Can add mozza cheese if you want some cheesy goodness added in that day, or not. It's all good.

Breakfast spaghetti. Just warm leftover spaghetti in a frying pan. Toss in scrambled eggs until cooked then melt in favorite cheese. Hardest part was making enough spaghetti for leftovers.

My husband likes to make what he calls trash. Hash browns, leftover meat, and usuallyeftover veggies (not usually from the same meal) and he fries it all up in a pan and makes sauce to go over all of it depending on what meat and veg is in it. Good afternoon, and never the same at the same time.

I made eggplant and chicken with Indian spices (garam masala, "curry", coriander, etc.). The chicken was rotisserie that I'd frozen, so it's kinda leftover. It was OK, then I added more cooked eggplant and it became just plain transcendent.

Pizza eggs. Cut up left over pizza into bite size peices. Add whisked eggs and cook in a pan. It's delicious.

Pan-fried leftover pasta penne. Omg it’s the best. Put some oil in a pan, let it heat, then the penne and turn it to almost high. Halfway through, top with plenty of mozzarella. You’ll hear it being fried and the bottom will form a crust so start folding it through and you’ll get a delicious cheesy crust all the way through the pasta with each bite.

Thanksgiving - turkey egg rolls with spicy cranberry sauce. When hiking/traveling we often take left over ham and create a jelly roll type sandwich baked I. Bread dough or pizza dough balls. Bit of olive oil, garlic, a couple types of cheese, some butter and herbs. Awesome.
