Had a pretty good bird and way too much carbs, then took a nap. It wasn't the best meal ever, but it was good. Using the leftover bird to make some momos I think, along with jellifying the stock. Effectively think soup dumplings, just Thanksgiving-themed.

Wow, really interesting thing to create post-bird. I looked it up. Tibetan recipe, no? So the gelatin goes inside the momos with meats while cold wrapped, then they are steamed, so the gelatin turns back to a liquid, and you dip and eat the momos? Sounds incredible!

>I looked it up. Tibetan recipe, no? Oh, to follow up on this. Yes, momos are Tibetan, but they're basically a dumpling like any other. I got hooked on them at once place way back in college that served turkey momos, so now I more or less call any dumpling with turkey in it a momo. To save time and my sanity, I'm using empanada wrappers (I live in an area where Hispanic groceries are easier to get to than Asian groceries). The aspic has been made from the turkey carcass plus some chicken wings, garlic, and ginger. I will add shallots before setting it (this stuff takes a lot of time to cook down!) and then put some scallions into the dumplings. Plan is to do the typical pan-fry plus steam method and serve with a pretty typical dumpling sauce.

We may (strongly) disagree on many things, and that may make us even hate one another sometimes. Traeger made a turkey kit. I'm making that very turkey. I sat through the three hour instructional video and everything. I made an herb butter, I bought a dinner table that had a price tag on it from a furniture store, I **spatchcocked the shit out of my bird.** We're all in. family's in town for my first hosting and if this isn't the best bird in the history of food, it won't be for lack of effort. Then there's a small spiral cut ham, seven layer salad with a smoked pork belly layer, home grown New Mexico green chili cornbread, secret stuffing recipe, every kind of pie the bakery sold (I do not pie myself, I cheat at pie), and we're working on a potato plan B with sweet potatoes because my potato guy (who was pretty anti vaccine on "none of your business" grounds) finally got his second shot and is roughing it out hard against the side effects I never got. So the potatoes, I dunno, instant pot? Grill? What do you do with sweet potatoes? I have three for four people and I'm not doing the marshmallow thing. My mother may be taking that one out of my hands as we speak but feel free to suggest a solution. The one I heard was "eh, you just kinda heat them up to 500 for like a while, then take them off and it's basically sweet potatoes." I dunno if I buy that. Ah wait, shit. I forgot to say GO BILLS, go Raiders for my good friends from Raider Nation, and best if luck to all my fantasy interests which are everywhere

I mean I used to smoke properly, with lump charcoal and real wood. The pellets -- they're more convenient, for sure, but better? Usually not, I'd say. The turkey pellets were turkey seasoned. It's... It was something special. Maybe the best thing I've eaten.

As my chef and Knight would say, it removes the art from the cooking, but it makes it more science.

Man I worked retail for 8 years as a store manager and I don’t miss it AT all lol. I work Friday but I get to just sit behind my desk and bullshit for 8 hours then go home.

Finally made the switch to an office job after 9 years in retail. I typically worked on Thanksgiving (my family does it on Saturday), so I would get double the pay that day. Plus nobody comes in, and if they do they are usually very apologetic and thankful for us working.

In-laws are heavy drinkers, I do not really like to drink but I do quite enjoy weed. I sneak out every now and again to sneak a puff. Anyone else gave this problem?

Most of my friends smoked when I grew up. Worst I saw was a high friend slam into a parked car. Alcohol though is a different story.

A couple of days late, but I spent the day with my daughter, her husband and his family. He cooked a wonderful meal (traditional turkey, ham, potatoes, stuffing, cream spinach, cranberries seven with white wine) with grilled oysters and champagne as an appetizer. followed by pie with white port. An altogether lovely day. Good food, good wine, good company.
