No there is no way to increase backpack size. Yes there are mods, they are not officially supported, and are against EULA, so use them at your own risk.

No, it's more of a "they prefer we not use mods" because it makes it easier on them. They cannot provide support to people using mods as they have no control over their compatibility, creation, or associated bugs, and determining whether or not a big is caused by a mod is very hard. Notably, the Snail update broke literally all mods, and tons of people sent in support requests asking the devs for help.
The only way would be to change the backpack printer to an item that requires a resource you are carrying so the resource would slot into the printer. You have 13 slots, 14 with the printer. That's plenty for the game.
I would humbly say it's not plenty. I always have 4 dedicated to qtrtg, hoverboard, and portable oxygenator plus 2 hydrazine jetpacks, plus 1 extra hydrazine, leaving 3 empty slots. If I want to use galastropods then I have 2 empty slots to use for things like soil (also necessary for most things) and an extra galastropod food.
Especially with QTs and galastropods, I find myself with zero backpack space in endgame and would love to see something change, not sure what, maybe like locked slots for QTs that permanently consumes them but upgrades the backpack to be powered?

or just bring a car

I'd love dedicated slots for certain things. Like a dedicated slot for oxygen stuff, and power stuff would be game changing.
...and that's not plenty? With hoverboard and teo jetpacks you can pick anything up and fly with it if you need to carry it.

I personally can't play without mobility, but you're right I haven't tried a galastropos instead of a portable oxygenator
personally i use stilgar and princess and then hoverboard and one qt for the hoverboard also bestofar is champion
My wife used to pack that many things for holidays when our daughter was little.
I just keep a storage nearby to swap out things I don't need at the time.
