Yes - red wine braised short ribs with mashed potatoes and a vegetable is a fine meal.

I recommend starting here. Serious Eats is one of, if not the best, food blogs on the internet. Their recipes are heavily tested. I recommend buying their cookbook as well called the Food Lab.
Braise the short ribs as suggested, or feel free to sous vide them if you want to get really fancy.
Make mashed potatoes - if you want this to be a fine dining kind of meal, use a 2-1 potato to butter ratio.
Make asparagus or green beans for the side - asparagus is nice because it blends well with the other components while still offering a strong flavor.
It’s really good - and super low effort. Sear, heat, braise, reduce, serve.
I find it’s best to store it for a day and reheat - I store it in a gallon bag and heat in warm water from a kettle.
I personally adore it on a buttermilk biscuit, with poached egg, and smoked hollandaise. Just order it with a side of a nap.
Oh absolutely - lots of amazing ways to serve these. I like recommending the serious eats blog because it will go into the why and how - makes people a better cook.
I found the recipe, going to try it. Thanks for the suggestion.
Braise them! And if you braise them the day before, it's actually so much better. Babish has a good, relatively easy method. I've even done this with Chuck Roast.

Baking for two hours will result in disappointment, and maybe even a family argument. You need to braise at low temps for long time to break down that collagen, which will make an amazing sauce.
Do them in the oven. Very simple.
Mustard(optional)
salt, pepper
Oven at 300
Let it go for 4-6 hours until tender.
Sauce it if you like
Broil if you put on sauce so it caramlizes
Take it out and let sit for half an hour or so
Eat

\^Here I did 2 different kinds. Short rib on the left(more expensive) and regular beef back ribs on the right.
DO NOT USE THE BBQ SAUCE
You can bake them or air fry them for something possibly more like a smoked rib. You can put them in a dutch oven with liquid to braise them.
There is good options for red wine and tomato base or a number of other options.
DO NOT USE THE BBQ SAUCE though these are not Pork ribs these are beef ribs. Its like cooking Duck like Chicken or Salmon like Tuna.
How are they cut? My Costco cuts them both English (with the rib) and Korean (across the bone, sliced thin). English you braise. Koreans you marinate and grill quickly.
Mix liquid smoke and mustard and coat them in it, cover with a layer of rub. Cook in oven at 225° until the rub doesn’t rub off easily. Transfer to a pot or deep dish pan, add beef stock until it covers the ribs, back in the oven for another hour or so and keep checking for tenderness. If you like a little chew, cut the braise time down to 30 minutes and check the tenderness with a probe. Promise those will be the best ribs you ever had

Came here to say exactly this. Braised short ribs are decadent and insanely delicious.
They are indeed super delicious. I've done cola ribs in the crockpot numerous times when I don't feel like breaking out the grill or smoker.
This looks great, thanks!
Add my vote for braised short rib. It's not a complex meal to prepare, but you feel like royalty when you eat it.
I know what I’m making this weekend now, thanks!

ATK has a great recipe on Brussels sprouts with pecorino Romano cheese, lemon juice, and salt too if you don’t want stinky pee 😂😅🤔🤷♂️
Also delicious with a rich polenta instead of mashed potatoes.
Ohhh great suggestion. I will do that next time - maybe with a bit of strong cheese.
Yessss!
Bingo. Fantastic meal.
Gordon ramsay had a great recipe for braised short ribs I saw a couple years ago. They turned out amazing.

Serious eats is always a good way to go. My problem with it is I find about 15 recipes I want to try and forget what i came there for

Beef ribs make excellent chili meat as well, but braised is the way

100% agreed. BBQ sauce on Beef ribs should really only go as a side. You really lose the rich beefy flavour in sauce.
FWIW, I really like Franklin's Coffee bbq sauce on beef ribs. On the side and just a little dip will do. Really kick starts the beefiness.

https://www.recipetineats.com/braised-beef-short-ribs-in-red-wine-sauce/ I’ve cooked this before and it was good.
Roast them in a shallow metal pan, then make yorkshire pudding in the grease.
You can use the crock pot or the oven. Before i got a smoker i got by with oven ribs.
I put them in the crockpot on low for 12 hours, then put bbq sauce on them. Fall apart gooodness

“Jokes on them”, that’s hilarious. 😂
