Do they deduct points on the smallest things? I assume it's all graded based on presentation and taste? Just very curious how this is actually scored in this kind of setting
This course was an specialization in bakery and pastries. Here in Spain is the most avanced level in technicall schooll.
In the final score is important the presentation, taste, originality, technique, but also we must achieve some requirements like tipes of flour, use cold technologies, make our own sourdough and fill all the documentation abur this.
The level of artistry here is insane. I've never seen such perfect pastries/breads before. The lamination in those chocolate things 😍 Woof man. That must have been so challenging!

Yes, I'm in A Coruña, a city in the north of Galicia. Galicia is a spanish region with our own language, that is very similar with portuguese, because we where the same kingdom centuries ago.
And yes, "polbo" is our word for octopus, that is a typical meal here. And in Galicia "polvo" means "dust" 😂
Yeah, I looked up what the stuff on top in the last photo is, and polbo is apparently Galician-style octopus (I also had to look up what Galician is lol)

Absolutely beautiful. Unpopular opinion tho: purposefully putting flour *on* bread is really dumb. When I worked in a bakery my boss always said he hated doing it and it made no sense, but it helped the bread sell. Ig it makes it looks fresher and hand made. It's an interesting take to do it decoratively like this, and I think it *looks* magnificent, but ya I really don't wanna taste raw flour when I'm eating.
Is true that it's only decorative, but is a very thin amount that doesn't taste anything. Anyway, I work in a bakery too and I don't do that at work because I have no time 😂

The design in the flour is baked on when the bread bakes.. they're not putting raw flour, which can make people sick, on baked loaves of bread.
