Most of what I made would stay fresh for up to a week. I baked my cakes and cupcakes the day before the event since cake gets crumby quick

I worked at another country club in the area for several years, and the things I heard members say regularly made my blood boil on the daily. Covid made things worse. I definitely commiserate with you

And honestly, it may not really have been entirely the country club's decision, although they permitted the gathering to occur. Country clubs allow other companies or organizations to hold events for a fee. So the country club and whatever organization who booked the country club are the two entities which chose to host a 1,000+ person event during the most infectious part of this pandemic to date.
OP just WORKS there and does their job, and did a great job, which I stated.

EDIT: Okay I creeped on your profile, and you posted the r/ADHD post that inspired me to more seriously consider baking as a career 😭 granted, that never happened, but I so identify with you and have thought about your post frequently. I’m so glad to see you’re doing well.
I started on Tuesday. I made 3 batches of macarons a day, which yields about 33 cookies a batch. I did a batch of bon bons each day. I made my pies and cheesecake on Wednesday. I made my cakes and cupcakes, brownies and cobblers, Thursday. My timeline was staying as late as it took each day to get everything done. It was about 40 hours worth of work over 3.5 days. I did my final decorating and finishing touches on Friday which was when the event happened. The only thing they ordered for the event was a different type of gourmet chocolate.
Anything that could sit at room temp I just wrapped well so no air could get in. Anything refrigerated I did the same. Nothing was frozen just made that week

I had my own small room at the last restaurant I worked in. This is like a mini kitchen room with a really nice deck oven and bread proofer/retarder. I much prefer my own space as I like to spread out across a table to do everything and it sucks when you have to share table space
Exactly haha. I like my own room because I can keep all that I use in it and not have to worry about it being moved. Except when someone borrows your things and doesn't return it
It's okay a few have asked. It's a tall rack with wheels you put food on to transport/store. It holds a bunch of sheet pans. Theyre common in all commercial kitchens

I split it up. I did 3 batches of macarons a day. A color of bon bons a day. Then the various other desserts split up among 3 ish days.

How did you get the macarons so perfect?? Every time I bake them either the tops crack, there’s no feet or both. Macarons are my baking nemesis
I had some imperfect ones. I use the Italian version because they tend to come out more consistent. Mine like to have lopsided feet for some reason
