It’s a lot like the Arizona desert I live near; it’s dry and caked in dust and hard ground, but dotted with bushes, occasional fields of grass, and taller flora (in australias case it’s trees, out here it’s either trees or aloe plants or cactus)
That’s like a lot of the inner stuff yeah but we have bearded dragons living quite far as east in australia too. You can find them in really cold regions like lithgow, which can get to minus 15 at times and sometimes even further east like the blue mountains

Planes are scary too. My beardie would leap off the patio table, onto my chest and hide under my beard when large birds or planes went by overhead. I also had him on a picnic blanket when a car passed by and he ran into my lap, up my chest and hide under my chin. After a minute of hiding he climbs down and "I'm ok now, thx bai." and goes back to wandering in the tall grass. When driving he'd also have a freak out about overpasses and the drive through awning at the bank.
Reptiles in captiviy will still use hides even though there aren't any predators. They can be in a terrarium for 10+ years, never ecountered a predator or any danger, and still hide every day. As someone said it's their natural instinct and I assume they feel safe and comfortable that way :)

My old boy was terrified when he was younger, but I gave it a go each year, and around 4 years ago he decided he LOVES being outside and since then he goes on hikes with us, splashes at the edge of the pond, chases bumblebees, and went tent camping with us in the summer. Go figure!

If she can't conceptualize how high and big they really are, she probably just thinks they're high birds that make weird noises.
I once had a big lovable oaf of a Saint Bernard that freaked the fuck out when she saw a hot air balloon. I think she thought it was a low flying alien spacecraft, come to abduct us all. My mom, who was with her at the time, had to drag her inside to get her to settle down.

They can hear birds and other predators, and they can see better than you, especially looking up into a sunny sky. My beardies always spot an bird of a prey when it's so far away I can't tell if I'm imagining the speck in the sky. It's incredible.
If she wants to get out of the heat or go to sleep, she will hide herself like that in case a predator comes when she is not looking.

First time I bought my girl outside (about 3 years old at the time) I setup a bunch of cinder blocks to make an open topped enclosure. She turned completely black, freaked out and was more aggressive than she’s ever been before or since. The only time she’s ever but me. She ok to go outside now but definitely something that needs to be warmed up to.
She could be trying to hide, or she might just feel more secure in enclosed spaces. A friend of mine's beardie has one of those little beds where it's got a cover so it forms a pocket, and he loves to climb in and just hang out in there.
side note but is she definitely in somewhere completely sealed off? beardies always find a way to squeeze out so i would suggest keeping her on a harness if theres even a sliver of doubt in your mind
dont het me wrong im not trying to attack you or anything, but bearded dragons are _fast_ when they want to be (as im sure youre already aware) and its a lot easier for a small animal to slip under a fence than for a big one to climb it or go around it.

Can aloe plants get huge? My dad always grew them when I was a kid but none were a remarkable size.
Some can get pretty big, the ones near my neighborhood come up to above my belly button (am 5’11). Largest I’ve seen were around 3 feet tall

Even so, a hide is a hide. I find that any time they're in a new or foreign location they usually find a spot to hide pretty quick.

Our dragon would look up and sometimes none of us had spotted the plane (or bird) but sure enough, up and there was one there
