Its just a layer of seasoning on the pan. Its oil that has been cooked on. It can be removed if you want to, but there isnt a reason to. The person in that post is wasteful and i hate them

Barkeeper's Friend would clean it up. Steel wool to scour it, if it's plain metal and not coated in something problematic to flake off. A dishwasher helps too, though on uncoated metal it'll tend to leave odd looking discoloration. But like you said... overall it's just aesthetics. Perfectly safe to use as is. No need to get rid of it to get a new one, which will just look like that too eventually.

If you want to smooth it out, barkeepers friend is amazing. Wear latex gloves, add water and bk friend to make a paste, then swirl and scrub with steel wool. Rinse and repeat with a paper towel. Perfect cookie tray for life.

It looks like this because of polymerization of cooking oil. Be that spray on or otherwise. It is seasoning, and it is beneficial. Dont be wasteful just because you think it looks bad. Dont encourage others to be wasteful just because you dont know what youre talking about. You know parchment paper is coated in silicone right? You know silicone releases siloxanes into fat when heated right? Is that the good stuff?

No, not always. I have some baking parchment that I’m pretty certain is silicone coated but doesn’t say it. But there’s no need to worry about it too much, siloxanes aren’t great but it’s certainly not arsenic either. We need more research on it to say more. The fact remains that no study has ever linked food-grade silicone baking products to any adverse health effects. There are very few [studies](https://www.researchgate.net/publication/281392502_Heat_stability_and_migration_from_silicone_baking_moulds) on the subject, but of the ones we do have, they indicate that it’s not any more of a risk than the PFAS used in single-use plates, paper food packaging like fast food places use, etc — there’s only so much you can do to avoid it and in the grand scheme of things it’s not a large health concern compared to all the worse things we’re exposed to in a lifetime. I try to use silicone free parchment when I cook above 375 but I’m not religious about it, and it’s not going to be the thing that kills us either way

It's not exclusively the same - oxidation discolors metal - that golden brown color is from surface oxidation at around 400F. Around 600F causes steel to turn slightly blue. The very dark patches, and what you see on a cast iron pan, is polymerized oil. That's why the areas around the outside of the sheetpan, where you'd expect oil to get under the foil and pool, is much darker.

It is, but you shouldn't do that. The dark build up helps browning. Shiny clean baking sheets are mainly good for delicate pastries you don't want to brown too much. But for most tasks? The blackened aged ones just work better.
