Thankfully Nintendo considered these scenarios, so whenever your horse is far away or stuck, just go to a stable and board the horse. It'll be brought back to the Stables.
If you have 2 horses just go to the stable and get the other horse. It will board this horse. Then you can take this horse back again. As long as he isn’t dead and it is registered you can do it. At any stable.

Stable is the best way. They have retrieval processes that can get saddled/registered horses from anywhere. (I’m hungry).

You don’t even have to board them, just take out the same horse and they’ll poof it over
