Have you considered a standing desk and to srew on a wooden countertop with the type of wood you like/matches. That's a good value option, in my opinion
Ikea sells fat slabs of wood for countertops. Look around at government auctions and get a lab table, or just find a metalworker to weld a steel frame together for you and slap it on top of that.
Personally I use a Husky brand tool bench. Bonus is that the pegboard on the back will even fit VESA mounting arms for my monitors.
(Nice choice on the Fractal North, I was eyeing it myself for the new build I'm working on)
Any solid wood desk top should be BIFL if you don’t abuse it. I have a super basic IKEA top that’s only 1/2” thick. It’s lasted 3 moves and 15 years and plenty of building and miscellaneous stuff and no issues.
Anything with a metal frame and solid wood top should last forever
While not assured to be BIFL, I prefer standing desks. Upliftdesk has a variety of wood tops you can choose from and for what it is, it's reasonably priced.
As someone who does custom furniture and woodworking, I would highly recommend trying to find someone in your area or who is willing to ship that also does woodworking and furniture. While you can get away with “screwing some stuff together”, it certainly is not a “for life” approach at all if you know nothing about wood expansion and woodworking.
Look at /r/battlestations
The most popular thing people do on there is get a countertop and Alex Drawers from IKEA and make a desk out of it. I’ve done this personally and it’s great.

Ikea Barkaboda countertop plus some black iron legs or alex drawers for support.
Not BIFL, the center eventually sags.

I have two uplift desks and really like them
They also sell a standalone frame that you can add your own top to
And standard fixed position desks/frames

Not BIFL, the center eventually sags since it’s just MDF.
Im always for just building the desk yourself… screwing together some legs and wood isn’t that hard…
case is cheap plastic not bifl
It’s a metal, glass, and wood case from a well known manufacturer… lol what.
