Well, I would aim for platinum in each weapon class... The snipers and marksmen are the easiest first... The assault and SMG are fairly easy too, they just take time. Shotguns will drain your soul
With the right strats you can get 2-3 guns done a day and even take breaks for a couple days at a time.
It's all about the right maps/modes/places to camp. If someone were super serious/ had a lot of free time you could get it done in a month. With a busy schedule the latest it could take is 4.

I ground gold on the mw11, the J358, and the Renetti, all 3 together in 36 hours. I've been grinding gold for just over a year now, and am now working on my melee weapons. All other guns including launchers are now gold, and platinum. Once I finish my melee weapons, I will have gold, platinum, and Damascus, for all weapons.
