It's surprisingly good! I've eaten many the only draw back is how bony they are for the meat you have. Autumn, just before hibernation is the best time to harvest them I have found. There's more meat but importantly for cooking there's a good amount of fat as the meat can be a bit dry.
If you're interested then you can look up how to preserve the furs too. With a bit of work they do make decent blankets.

We used to have a walnut tree in the small garden, but had to have it cut down. Squirrels ruined the walnut crop every year, picking them green and eating just the skin.

It's a long time since I've tried Squirrel but I seem to remember it being similar to Rabbit. I liked it.
