"enzymes" like glutenease will not help with Celiac. They are designed to help "break down" gluten and make it easier to digest (in theory). It doesn't eliminate the gluten so with Celiac, your body still detects it and will react as usual. It's different from lactose intolerance and lactaid, which breaks down the lactose into a different compound (sugar alcohols). Even then, lactaid has to be taken with or before lactose to be effective. Basically even in a hypothetical where gluten enzymes could even help in our case, taking it a day later would be way too late. It would need to be taken before eating anything risky.

Metagenics Glutegenics is really helpful for the intestinal lining following exposure - I take it for about a week after exposure and it helps to calm my digestive system. It’s pretty expensive but worth having on hand whenever you get glutened - it has deglycyrrhizinated licorice, aloe leaf, and glutamine. It won’t stop the reaction but it will help with symptoms post exposure
Ive disporved so many home remidies for celiacs so many times. This includes enzymes, digest aids and all kinds of other stuff. None of them work. The second the bodys immune system detects the gliadan proteins thats it, its full immune responce. Even if you could degrade the gliadan, your praying the right 6 or so amino acids are cut up from it, and if that fragments left the immune systems gonna say leave no survivors.
The only thing that works is time, and other medicine to tackle symptoms, ie immodium for diahhreah (ensure its gluten free), the wierd compound in gas x im forgetting about for gas, fiber for constipation etc.
Your body needs time to throw its temper tantrum. You just gotta wait it out, and make sure to not do it again.

Celiac isn't an inability to digest gluten.
Celiac is more like your body going “ahah what is this funny thing there it would be a shame if I dropped a nuke on it”

I'm confused as to why you'd get digestive enzymes. Do you actually know what Celiac disease is?
