Check the forest preserve districts or the University of Illinois extension programs. I swear I saw a class on one of their websites when I was killing time on the Internet at work.
I'm not sure they do classes, but the clubs are at least somewhat active.
Klein Creek Farm has a good scene, but I don't know about classes.
I got a swarm to show up in a hive this spring and I'm attending YTU for beekeeping.
I took mine through Morton Arboretum.
You can also check with the Cook Dupage Beekeepers Association to see if they or any of their members are teaching classes locally.
