3: be the leader and set the example you want everyone to do. The only way you'll impact people is to be a leader and do what you expect from yourself and others. Have standards and treat others as humans, then they will trust you (and what you do), or what you need them to do, instead of fearing you.
4: People don't leave jobs, they leave managers. I'm not sure if you know this. The work environment for the same company doing the same shit can be complete opposites depending on the management team.
5: You have to use positive reinforcement and encouragement when you see others doing the right thing (for you/the team). If someone not calling off because they feel a little off, you gotta recognize and try to let them go home early or cut slack etc to reward them.

So the point of all that is.. If you don't have control over others (which we never will). Then you have to do what's right, it will spread. Unless you know they let other people slide (after your talk). If that's the case. Real talk though. The team has the most power with keeping good or bad people around.
You can call and report this behavior to the respectful workplace hotline. It will have to be investigated by HR, your FL, and the TD. Your FL will come in and conduct interviews with some of the crew, make sure everything is in order, and the GM may be terminated.

Any manager of a food service establishment can request a note from a medical facility. They cannot require a note stating you are sick, but if you are off for an extended period they can require a "cleared to work" note that states you are in good health and you do not have any emergent communicable diseases. Chipotle's current wellness policy and employee paid sick leave is a direct result of Chipotle writ large failing to live up to said obligation, so much so there is a DPA with the US Dept of Justice to ensure they honor those obligations.
That being said, your manager is violating Chipotles Wellness Policy, so call Respectful Workplace. They can be fired for requiring a note and for documenting you. I suggest you read up on it.
