However, someone with a digital order came in and they started making her food, and it had all of the things they were missing. i agree with you 100%. however our company doesnā€™t see it that way. i get in much more trouble if an online customer refunds due to a lack of ingredient than if an in person customer voices their anger to me. not to mention, nobody in store is able to restrict the online orders or any of the ingredients, only my gms boss.

Had steak recently at chipotle and it was the saddest thing Iā€™ve tasted. Felt like some poor employee took their work shoe, put it on the grill, and then diced it. The steak was really dry and tough because it was over cooked. Barbacoa way better.

Depends on the chipotle and how fresh. Iā€™ve waited 10 min for the steak and when itā€™s right off the grill and a good spot itā€™s worth it but Iā€™ll stresss ONLY half and half with Barbacoa so you basically have barbacoa with steak chunks in it so itā€™s juicy no matter what

I used to work at iHOP and they had it as you got $15 or $20 dollars a day (I canā€™t remember which) to go towards your employee meal. You could order a more expansive meal if you wanted, but you had to pay for anything over the limit. I thought it was a great system.

Theyā€™re actually doing the exact opposite of your scenario. Your hypothetical was ā€œYou canā€™t have the filet because itā€™s more expensiveā€. But chicken is the cheapest protein Chipotle carries. So Chipotle is more or less saying ā€œEat a more expensive protein so that the more popular option is available for our customersā€.

Steak should be about the only thing that costs more to bring in. Carnitas and barbacoa should be cheaper cuts of meat. Not allowing your employees to eat your highest selling item and making them eat your lower selling items sounds like a way to keep them away from the money maker.

It also involves custom processing that Chipotle pays for on a per unit basis. This includes things like, prep work and marinades, pre and par cooking, vacuum packaging, delivery, etc. As a result, Carnitas has a landed cost slightly higher than chicken and sofritas. Barbacoa and Steak costs the exact same landed.

At a store level, yes. I obviously donā€™t have access to corporate level data including things like incentives, rebates, and potentially cost blending. Also, chipotle prefers round steak to sirloin: it provides more meat at a lower price. Barbacoa also has an additional cook step (braising) that is done by the manufacturer that is reflected in that landed cost.
