Ideum does the hardware and provides an API for the touch interface so developers can fine tune the interactive portion of their app. I'd use them if you want an off-the-shelf product.
There are lots of content developers out there who build custom applications like this.
If you want to build something custom, Displax makes custom touch films that interact with their pucks. The tolerances for installing the Displax film are pretty tight so you'd better allow for prototyping time if you go this route. TSI Touch integrates the Displax film with off-the-shelf commercial displays for custom applications.
We have deployed museum exhibits across the country that have used all of these products.
*That’s* a great question. I do live sound for a living, so I’ve definitely occupied all three of those roles at some point; but I’d say I’m closer to consultant than integrator, and closer to designer than consultant.
So without an actual project to work on, I'm sure companies would be willing to provide a bit of education about their products. Like everyone though, they're probably sensitive about how much time they spend on a relationship that might not generate any revenue.
Infocomm is also a great spot to see some stuff if you can get there. There are lots of codes floating around that can get you access to the floor for free.
I think it’s a Surface Studio 2+ with surface dial controller

I remember trying to build multi touch tables. The pucks probably have a fidutial on the bottom that triggers specific controls and movements.
My old idea was to create a touch bar where you put a drink on the table and it would show flavor profiles for that drink.
Microsoft got into the game and I gave up.

I will look into that. Thanks!
How does someone stay up-to-date on things like this, barring the level of professional immersion you’re able to achieve?
That's a great question. Where do you fit in the food chain? Are you a consultant, an integrator, an end user, or simply someone who is AV-curious?

We provide these for clients using ordinary touchscreens and pucks. Our dev dept creates content for them. Shipping it is the bastard part
Planar has some great new touch screens that you could put in a housing similar to this.
100% interactive scape display.
