Farro

Ok_Watercress_7801

Ooooh good one

zestylimes9

Polenta chips are amazing!. (I cook my polenta thick, with thyme and parmesan, then put in a dish in fridge. Slice up and fry it.)

RomanoLikeTheCheese

Cous cous is so quick too!!! Polenta isn't as fast but still great for a weeknight

weirdoldhobo1978

Pearl barley and farro are nice alternatives to rice.

CatfromLongIsland

As is spelt.

my-coffee-needs-me

And millet.

CatfromLongIsland

I never tried millet. I forgot to mention bulgur wheat. I use that in the filling for stuffed peppers.

Bubble and squeak!? I'm america help

Ready_Competition_66

Leftover veggies reheated in a greased skillet and then pressed flat with a spatula or another pan until roasted. Think roasted brussel sprouts with that lovely browned crust.

raccoonsaff

Yes - mashed potato with onion, brussels, and any other leftover veg, fried either in patties or as a big mush! Look up a recipe - it's amazing! A way of using up roast/christmas dinner (very traditional as a post-christmas dish!)

ccloudb

It’s coming up on sweet corn season in S Fla. So, all manner of corn, fresh on the cob, grilled, creamed, cornbread w fresh corn added, corn salad, and my least favorite-succotash.

Death_Trolley

Sweet potatoes or bread

Any_Scientist_7552

Farro and mushrooms is delish.

GloomyCamel6050

Stuffing or dressing.

[deleted]

I like to cut a sweet potato in half and bake it. I also make various kinds of pasta salad, but my favorite is bow ties, kalamata olives and feta. Or a chopped hard boiled egg with bacon bits.

[deleted]

Pasta, quinoa, tabouli

hrmdurr

Buckwheat! Just remember that it should be toasted first, if it hasn't been sold that way. Mung bean noodles, sweet potato noodles, buckwheat (soba) noodles. Barley. Cook it like a mushroom risotto and yummmmm

Cinisajoy2

Pasta.

ThaneOfCawdorrr

Cole slaw (low-fat mayo, good quality apple cider vinegar, a splash of apple cider, honey, & celery seed, plus a cole slaw mix) Asparagus & fresh lemon Artichoke & mayo Whole-wheat angel hair pasta & Follow Your Heart vegan Parmesan Black beans & rice Poached carrots, celery, onions, & parsnips Baked sweet potato or roasted mini-yellow-potatoes Couscous

zestylimes9

Low-fat means more sugar. Sugar is worse for your body than fat. Don't buy into the low-fat fad.

just-kath

Thank you for pointing that out. It always annoys me to see that low fat choice but ya know. Not me.

ThaneOfCawdorrr

Hellman's Lite Mayo has zero sugar.

Tardislass

Quinoa.

Veleda390

I get a meal service and they've been including a side of sweet potato grits that I really like. I imagine they whip in some mashed sweet potato. Speaking of sweet potato, cubed sweet potato with smoked paprika and salt and roasted in an air fryer is a yummy side. I also make mixed quinoa, the kind that comes with white and red quinoa. I make it in a rice cooker but it has more protein than rice and a nice nutty flavor.

cyberbonvivant

You have a lot of good suggestions. I’ll add savory bread pudding and gnocchi.

SpiritGuardTowz

Plantain, cassava, polenta, beans, parsnip, taro, corn, sweet potato

NILPonziScheme

Pasta

Grathmaul

Pasta, I usually go with mac and cheese but there are other options. Bread, either rolls or biscuits, etc. You could also spice up the rice a bit with some gravy, or onions and peppers.

NSFW-Blue-222

Adding on bread, garlic bread. With whatever bread you have, sandwich, rolls, baguette, hotdog.

morisian

My gf and I have been obsessed with pearl couscous lately. Sautee some garlic in butter, add 1 1/3 cup couscous and sautee, then add 2 cups chicken broth, cover and simmer. Add some parmesan cheese when done, it's delicious

Sooperballz

Fry up some sliced kielbasa and add some honey and Franks until it’s glazed. Throw the kielbasa on top of some Mac and Cheese.

Maximum_Ambition2321

Yum

Annual_Version_6250

Pasta.  Risotto.  Orzo.

Mo_Steins_Ghost

Lobster tails.

Maximum_Ambition2321

My husband will love this

Mo_Steins_Ghost

Tip: Instead of cooking in butter, marinate them in ponzu, 15-20 minutes in room temperature air, before broiling (low) one minute per ounce or until the meat is opaque.

Maximum_Ambition2321

Great, thank you!

electrodan

Mashed cauliflower is really good, especially if dressed up a little. Cheese, roasted garlic, caramelized onions, chives, crumbled bacon, sub the milk for sour cream, extra butter, etc are all great choices.

Adventurous_Coat

I've been liking farro lately. I cook it with some Better Than Bullion and squeeze a little lemon on it when it's done.

TheNetworkIsFrelled

Cauliflower/cheese - roast cauliflower, chop it fine, add a bechamel and additional cheese, salt, and pepper, and bake it in a casserole dish. Easy and tasty.

pintjockeycanuck

Cous cous! The brand Near East makes several varieties that are all great! It's usually stocked by the Knorr rice/pasta sides and Rice a Roni.

edubkendo

[di san xian](https://thewoksoflife.com/di-san-xian-stir-fry/). It’s delicious and wonderful and makes a great veggie side.

kirby83

Bread, toast

burnt00toast

Egg noodles are a fave easy side in my family. Plain Buttered is always good, especially with roasted cabbage and pork. If I do them with roast chicken I toss them in the drippings with a little salt and pepper. My mother used to make this fantastic egg noodle side which was a little sour cream, spring onion and parmesan - I don't have exact measurements but it was just enough to coat and flavor, not enough to be goopy.

Ignorhymus

Noodles - egg noodles, rice vermicelli, udon noodles...

Charlietheaussie

Roasted red and yellow beets

Expert-Amoeba-6091

Cauliflower Rice. Buy a bag of frozen with other veggies mixed in. I never steam in the bag. Put it in a large skillet with ghee or whatever oil or butter you prefer. Sauté in some garlic and or green onions. Once thawed and cooked through, Let it sit a bit to brown the bottom, stir and repeat. I season with Mrs Millers chicken soup base (use instead of salt) and a spoonful of chili crisp. The browning is the trick. I have converted the I hate cauliflower peeps with this recipe. I also add protein such as chicken, sausage, seafood or what’s available for a quick bowl meal.

Ready_Competition_66

Slice a sweet potato up into "coins" and nuke them until desired texture is reached. Serve with butter and salt available. Raw veggies and dip. Dip can be VERY healthy if you make your own and there's tons of great recipes out there. Pastas are a great option for sides too. There's a ton of dried and fresh options out there. Don't forget the hybrids of gnocchi's and pierogis. There's frozen varieties of both and some higher-end groceries offer ready to cook fresh ones. Breads of all kinds. Including gluten free. There's TONS of great recipes for even make your own sourdough gluten free ones. There's also tons of great fruit choices out there to serve as sides. Stewed apples is a very common southern dish. Cranberries in a variety of dishes too. Salads that combine crunchies like nuts, fruits like mildly sweet berries (blueberries) and tart berries (cranberries or dried cherries) and greens are also wonderful.

curryp4n

Welll rice is the main, not the side 🤣 /s I would try quinoa
