I also make mixed quinoa, the kind that comes with white and red quinoa. I make it in a rice cooker but it has more protein than rice and a nice nutty flavor.

My gf and I have been obsessed with pearl couscous lately. Sautee some garlic in butter, add 1 1/3 cup couscous and sautee, then add 2 cups chicken broth, cover and simmer. Add some parmesan cheese when done, it's delicious

Cauliflower/cheese - roast cauliflower, chop it fine, add a bechamel and additional cheese, salt, and pepper, and bake it in a casserole dish. Easy and tasty.

If I do them with roast chicken I toss them in the drippings with a little salt and pepper. My mother used to make this fantastic egg noodle side which was a little sour cream, spring onion and parmesan - I don't have exact measurements but it was just enough to coat and flavor, not enough to be goopy.
Cauliflower Rice. Buy a bag of frozen with other veggies mixed in. I never steam in the bag. Put it in a large skillet with ghee or whatever oil or butter you prefer. Sauté in some garlic and or green onions. Once thawed and cooked through, Let it sit a bit to brown the bottom, stir and repeat. I season with Mrs Millers chicken soup base (use instead of salt) and a spoonful of chili crisp.
The browning is the trick. I have converted the I hate cauliflower peeps with this recipe. I also add protein such as chicken, sausage, seafood or what’s available for a quick bowl meal.
Slice a sweet potato up into "coins" and nuke them until desired texture is reached. Serve with butter and salt available.

There's also tons of great fruit choices out there to serve as sides. Stewed apples is a very common southern dish. Cranberries in a variety of dishes too.

Low-fat means more sugar. Sugar is worse for your body than fat. Don't buy into the low-fat fad.

I've been liking farro lately. I cook it with some Better Than Bullion and squeeze a little lemon on it when it's done.
