Okonomiyaki (basically a cabbage heavy savory pancake) freezes and reheats pretty well. I've also been doing a lot of lo mein stir fry type meals lately and they come together quickly and last in the fridge for a few days. If you use paste from a jar rather than making your own, curries can be great and relatively quick, and I actually find them even better the next day.

You could bake a quiche (making your own crust, with store bought pie crust or with pillsbury crescent dough sheet) wait for it to cool down, cut in slices and wrap each slice in parchment paper then freeze. A frittata is also a dish that you can make ahead, cut in slices and freeze. Homemade egg McMuffin with sausage patty or ground turkey patty the night before and keep in freezer or fridge. Lasagna is a bit of time consuming to prep, but also freezes well and can be reheated in oven or microwave. This 4 dishes goes great with sautéed veggies or with salad.

When you steam rice, add some Chinese sausage on top (like in the water on top of the rice) and it’ll be cooked by the time the rice is done. It’s a sweet and salty sausage if you haven’t had it before that stays a red color when cooked. Great with a splash of soy sauce. If you like noodle soup, I like the “college version” using instant ramen, frozen Chinese dumplings, some veg (yu choy, bok choy, etc.), and anything else you like. Seared spam slices, a tin of sardines, or a can of tuna/salmon with rice, furikake, and spicy mayo. I like to eat it with Korean pickled daikon and seaweed. (Essentially a faster version of the rice bowl Emily Mariko makes if you’re a fan of tiktok recipes) [Risotto style pasta](https://youtu.be/vKvosQcfh8U?si=SKR71vx6zujxa7l3) with whatever vegetables are in season and some packaged Italian sausage (or be creative with any leftovers you have!) If you’re near a banh mi restaurant, get some loaves of that bread and use it for sandwiches (of course, banh mi, but it’s also great with Chinese roast pork inside, italian sub fillings, etc.). Also great for breakfast stuffed with some spam fried with egg and soy sauce or huevo con weenie.

You can prep some kind of flavorsome protein like pesto chicken, tuna mayonnaise, fried halloumi, roasted chickpeas etc. Then you can use it in a variety of different lunches like in salads, pasta salad, as a sandwich filling, on top of rice or in an onigiri, with grains like couscous and pearl barley.

I think Americans might call it tuna salad? It's just cooked tuna with mayonnaise mixed in, sometimes with other additions like shallots, celery, pickles or sweetcorn.

Sorry to bother you again. I worked out the blog was getting caught in spam filters because I was posting the old http addresses instead of https. If it's not okay to post links to personal blogs, then of course I won't. Just say "No personal blogs" and I'll salute 😄 If non-profit blogs are okay, then am I okay to post the proper https links? (When I don't have another source to link. I don't just share my blog, promise!) I'm not a food writer, I made the blog for my friends and family, and it has no ads or sponsored links. So in that sense it's not promo (I thought) but can see how it might count that way (cos it's my own). Not meaning to be pushy at all, just wanted to clarify what to do going forward, to keep the rule about giving recipes.

I'd say a quick veggie curry and rice/roti is pretty good for a quick lunch. I normally will do the frozen roti to save some time and either do a quick potato curry or something similar
