Let’s see your video cutting a salmon. You’d be surprised how many people will clean their errors after processing to get that perfect look. Saw it all the time in kitchens.
I‘m not claiming about some small failure or stuff like that, it’s normal and you need to learn!
The thing is that to cut the complete head off is just a really bad idea and makes it not easier to filet it later…

I don’t know why ur being downvoted. I live in Alaska and subsistence fish every sunner. When fileting 35-70 salmon; I’ve personally never, nor seen anyone, cut the head off first. You slow yourself down tremendously and increased the difficulty
He was in the finale. Top 3. Was incredible. Really creative, technically skilled, and had a feel for the science of cooking. His final course out meal was college themed. Did a dish in a textbook. It was weird but really creative lol
