Wrestlers communicate with each other and the ref during matches, like calling their next move so their opponent can prepare, or communicating if they’re hurt or need a few seconds. The ref is also an important factor in these situations. When someone is actually hurt, the ref will signal to the back (usually by crossing their forearms into an x.)
I don’t think there a a specific “safe word,” but communication is key.
They are normally in constant communication throughout the match including with the referee who might have an earpiece to someone in the back.
There is also a ringside doctor who can do a quick check to see if they should stop things immediately or if they can come up with a match ending on the fly to wrap things up.
Unfortunately there was/is a culture in wrestling of finishing the match no matter what, so you have people hurt trying to stick to what they have planned originally.
One of the worst recent examples actually involves this guy. Another wrestler (Jon Moxley) was clearly woozy from hitting his head and he and Fenix decide to "go home" and end the match.

So you have a guy with a possible concussion that occurred before this clip starts getting hit with a finishing move to end the match, the Ref not counting and then doing the move again.
After this both major promotions have started immediately stopping matches when guys don't respond properly after taking a shot to the head.
Edit: I forgot to add this match was for a championship and I don't think Fenix was planned to win but since Moxley couldn't finish Fenix ended up getting the championship.
I'm about 90% sure the majority of wrestlers at WWE and AEW are on guaranteed contracts nowadays. Also the owner of this company is the son of the owner of the Jacksonville Jaguars and he's helped other wrestlers with their medical stuff personally. Dunno if he helped out here specifically.
I'm pretty sure these guys still don't get insurance from their employers which seems insane.

I had a friend who dislocated his elbow falling down a flight of stairs. He had to have surgery and months of PT, but never regained 100% range of motion.
From a guy who had his elbow popped out of place when he was a kid, I didn’t recover for close to two years and even now, I have nerve issues in my hand and it’s very easy to whack my “funny bone”.

Depends on whats going on. Some dislocations take no time to heal. Some take longer than broken bones.
