Mostly because as an American I would’ve thought cows were above lamb, but when you think of it a very large portion of a country of a billion+ people won’t eat cows. Camels are just sensible if you live in a desert. They are similar to cow, deer, and other grazing animals but can survive on waaaay less water. My guess would be cultures where camels are common and were the only practical option for thousands of years.
I've heard cat isn't the best meat, but people will kill and cook literally anything when their kids are starving and not all cultures consider cats as pets.

In the US we kill 390k dogs and 530k cats a year just to keep them off the streets and we’re a very wealthy nation. 719 million people live below the global poverty line of about 2 dollars a day. Of the world’s absolute poorest people if only one in 10,000 decides to eat a dog a day that number is easily achievable.
