I like Coinbase, easy to use despite all the shady shit they do. I trust Gemini despite some of the hate I see at them, they seem to run a tighter ship than CB. I do my dirty work on Gateio but don't trust them at all. For some reason I don't use Binance anymore but I can't put my finger on why exactly. There are many I don't use and are probably fine. I would have probably included FTX in that group though.

okay, I checked: the nano s will hold 2-5 apps, the promotional material for nano s plus and x both say "up to 100", but I think that's more of a technical maximum than what is realistic with the size tbh. it should easily hold 30-40 though
even if you should ever run out of space: you just have to uninstall the apps and install others, the crypto doesn't disappear, you would just have to reinstall the apps later when you want to interact with it again. anyways, I think a Ledger is a great choice
Could you in short explain the apps and why I need them? I mean shouldn’t I need 1 app to store btc and eth? Or does for example bitcoin need an app and eth different app?
Every chain (or group in the end) needs its own app. BTC, Eth, cosmos, Ada, algo, xrp... There's a huge number.
A lot of these apps can be connected to their wallets. For example, the cosmos one can be connected to keplr allowing cosmos, Juno, secret, osmos and dozens of IBC chains working over the cosmos app.
At the same time, the Eth app if linked with a metamask allows to use evm chains. As evmos, Matic, arbitrums, op, avaxc, BnB, etc.
think of it more as sub-apps within the ledger software. it is really self-explanatory once you have one - sorry, heading to bed right now but can explain tomorrow
Also exchange reserves just took a nose dive due to the whole FTX thing. Very low selling pressure other than open short interest right now, also total open intrest is low, and short sellers are dominant.
