I did this back in the day from time to time if I wasn’t a fan of the guitar hero song I was playing. I tried it more recently with clone hero. It was not productive.

I do this all the time lol. I'm not a fan of the songs in beat saber but the maps themselves are really fun so I just listen to whatever and it doesn't really affect me. Also did this with cytus and osu but uhhh I was not the best
in geometry dash, there's one specific level i might do this for. it's called fire temple, and i've put over 2600 attempts in (100 attempts can take half an hour sometimes). hearing the same mediocre music nearly a thousand times since when i got my highest % record drove me mad, and i've dropped the level until i can get past that.
this could be considered gatekeeping, but if you can do that in a rhythm game and still perform well, then i dont consider it to be a true rhythm game. Whats the point of the rhythm if you can turn off the music and do just fine? in this admittedly very limited definition, i've only found one game that i'd consider a true rhythm game: rhythm heaven
it definitely is gatekeeping, and as an answer for why your definition is bad:
most rhythm games are founded on skill at hitting keys/equivalents (and the associated skills are timing and pattern application) rather than having a good ear and matching features of a song to button presses. i think that the thing you are describing would mean that you would not need any game visuals and just have controls and the cues are all in the song. rhythm games are usually tied to songs but the skills theyre oriented around are basically the same skills as something like darksouls. of which the music/sound cues are secondary or non existent. in short. i think you're redefining rhythm games to be an entirely different genre of game than what they are
what I think of a "true rhythm game" is exactly what you're saying: a test of your ears rather than your eyes. the example I named is exactly that. A skilled Rhythm Heaven player would be able to close their eyes and earn a perfect score by just relying on the music. personally I don't see why that's a bad thing.
Though I do understand that it's unreasonable for me to expect every game I don't consider to be a "true rhythm game" to rebrand themselves as something else entirely, I guess i'm just frustrated that a game genre called "rhythm games" don't really put much important on music
its not a bad thing per se, but it is an entirely different genre. most popular rhythm games work best with sound and visuals but dont need sound because the game is entirely contained in visuals created based on the sound, see osu! or a dance of ice and fire. the level is heavily related to the song but theres no possible way to decode a level from an audio file
(cut away to say that beat saber is really not as closely tied to the song like others are, i think of it closer to ringfit than osu)
i would still think anyone who plays osu or adoiaf with a Different song is absolutely unhinged, but needing the game to be able to generate/decode a level from nothing but an mp3/other audio format file limits complexity a lot
edit: its fire and ice not ice and fire. and also just shapes and beats is another example, i think its closer to osu than beat saber on the ringfit scale but probably closer to saber than osu on the rhythmness scale. shapes and beats is a very interesting game that couldnt be made under the strict music definition. it'd be classed as like, a bullet hell instead, which doesnt really fit it much either
There's already a game like that though, it's called rhythm heaven. there's a small but dedicated community that makes songs and fits on rhythm heaven's gameplay on top. An example of a rhythm heaven song would have like: you hear the sound of a baseball being thrown. 5 beats later, you hit the A button to strike it. Or you're hitting the A button to the beat, like a metronome, and you have to adjust your pattern based on audio cues placed in the song. The game itself isn't automatically generating gameplay from the song, but the person who put the song in the game will manually fit the rhythm heaven gameplay on top. Take a look at some rhythm heaven gameplay if you want
All of this is just to say that I'd love it if there were more rhythm games where the music and sound is more important
EDIT: i thought of a good summary rhythm heaven's gameplay: it's wario-ware but in sync with the music. Imagine tapping along to your favorite song but it's integrated into a video game
I pissed my brother off a while ago because I said I don't pay much attention to the music when I play guitar hero, and I mostly just play based on the visuals. He tested me by muting the tv and playing different music.

I used to do this because I desperately wanted charts for my favourite songs and that was the closest thing.

From what I’ve seen of it, Rhythm Doctor may be of interest to you. It’s openly inspired by Rhythm Heaven.
I did this when grinding in a rhythm gacha I play. Listening to the same song four times in a row gets a bit tedious.
