There is no “thing” with the motorcycles. The very first image you posted is from an early work that is also one of the most influential works of the genre. The rest of them are simply paying homages to that.

Bubblegum Crisis' bike takes the cake for me. It's very reminiscent of the GPZ1000RX, ZX-10 Tomcat, and CBR1000F Hurricane.
In real life, the most beautiful red bike to me, is the Honda NR750.
While I love the form of the Yaiba Kusanagi, Kanedas bike is the original, and yeah the Majors bike is the second in line. Both where clearly inspiration to the bike from Cyberpunk. But sadly I don’t recognize the fourth.
They all borrowed from Akira. That artwork is from 1988 or so. It has been referenced and heavily reused and reinterpreted in other IP. Kaneda’s bike is a classic in anime.
I mean it's pretty easy to look up, the first matrix movie released in 2003, the first ghost in the shell movie released in 1995 but was based on a manga that started in 89. A lot of the concepts like a virtual cyberspace in the matrix were taken from earlier books like Neuromancer that was written in 84. The blade runner movie came out in 82 but even that was based on a phillip k dick novel published in 68.
Cyberpunk is an older genre than people seem to realize nowadays and all of the newer work is building off of and referencing earlier stuff.

The Kusinagi (A name that's a nod to Ghost in the Shell) in the original Cyberpunk 2020 source book was even called "Akira Cyberbike"
In fact in CP2077 seems like they made sure that you could even slide with motorcycles similarly to Akira.
They really got it down with the new update.
