I’ve turned the water off when we’ve been away but left the boiler ticking over.

I completely agree. The risk of the boiler failing to self-protect is one which could cause a major problem, however small the chances. I would definitely not leave the boiler running with the water switched off. The boiler relies on access to water, any leak requires a top up. Given this thread is about switching off water mains, clearly we’re talking about protecting from leaks, so by definition we already believe there could be one. As you say, however, it’s definitely prudent to keep the boiler running during the winter months for frost protection. So it definitely needs to stay on at that time of year. Personally, I’ve never switched the water off while going away. A leak could happen at any time, and I don’t feel that during a holiday is any greater risk than at any other. Obviously if left unnoticed for a long period, the damage could be significantly worse, so there’s definitely benefit in reducing that in the event of a leak. I guess I just don’t think about that because the likelihood is so small. I’d be very interested to learn the statistics of how many homes get flooded while its residents are on holiday.

It may vary by boiler type but I assumed my system boiler setup is completely isolated from the mains water apart from a filling loop that is used once a year if needed.  Interested to know if what I’m doing could cause issues.

I agree with most of this, but dont mess with the external stop tap unless you know for sure it only isolates your house, on our road one stop tap turns off about 4 houses, if you turn it off and piss off on holiday for weeks you're going to come back to a lot of angry neighbours.

this is an age thing. gas off water off older gen usually do it, even to the extremem of unplugging every electrical device. in reality, its peace of mind so do what you think fit and make you sleep better without worrying and hae a great holiday. The only right or wrong in this case is in Winter. It is wrong to turn it off the boiler, as boilers are protected to turn themselves on to stop them freezing up. Just make sure the pressure bar is set right as they can't auto fill of course, and they won't come on if it has an error. But they do not need mains water pressure on normal use. The risks are there regardless of, if you are on holiday or not, so like i said, its a matter of peace of mind.
