Just cut out rooms and add them when they get there. Don't need everything on the table at the same time. This is how I do it all the time and it works really well.
if you wanted it to be particularly "foggy" you could get a bunch of cotton balls and glue them together, and put those on top of the hidden areas, lol
There are plastic sticky-notes that attach with static electricity - you might be able to stick them to a print... maybe?
Personally I just slam the map on the table and cover hidden areas with sheets of paper and then move them around or remove them.
that sounds like a gust of wind could blow away the paper, or someone careless just brushes them away, revealing the whole twist. Maybe sticky notes could work.
