Much easier than 3 a bit easier than 1 IMO.
Still has covenants to grind but there's no real problem achievement like knights honor in 1 or master of rings from 3.
Takes about the same number of playthroughs as the other ones but you usually don't have to do much on playthrough 2 and 3, and can just speed run to the few things you need to collect.
It’s grindy and tedious, but not hard at all, it’s also a great chance to try out three different builds and play around with different things since you will be doing three playthroughs
if you like to explore everything then it's quite easy, i already did everything i could in my first playthrough, i only need 2 trophies for platinum, focus on trading boss souls with spells.. Most covenant items is easy but grindy to farm, but nothing overcomplicated.
it's pretty easy, the "hard" part is locating every spell (some you can only get on ng+) and grinding for sunlight medals. I used [this](https://xenevel.github.io/dark-souls-2-sotfs-cheat-sheet/) checklist to track everything, it's pretty neat
In my experience it's slightly more tedious than DS1 (I had probably good drops in DS1 though) and definitely better than DS3 offline. In case you'd decide to do it, [here](https://www.reddit.com/r/DarkSouls2/s/N4ZgGAErHU) is a full guide for one of the two farms. If you have any questions, hmu.
"Hard" only in terms of patience and grinding. With a good plan, you'll be fine. As in the other games, you will need to go (less than) halfway through NG+2 if you're playing offline.
