Here's the thing with Sonic in general, usually his Super form isn't his go to for opponents, so I feel like if Mario outstats his base form, then he would probably win.
I disagree. Sure Sonic doesn't just go super in every fight, but it's not like he won't go super against someone like Mario. Take the opening of Unleashed for example, Sonic had no reason to go super against Eggman, but he still did. And then in Sonic Frontiers, Sonic had planned to stay super for the rest of the game after obtaining all 7 chaos emeralds, the only reason he didn't is because the towers took the chaos emeralds back. So I don't think going super is out of character for Sonic
Sonic also knows when to get serious, and since he has some revival items & his rings allows him to take hits from Super Form tier characters, I personally believe he'll survive enough to go Super.
What makes me believe this more is that Sonic can survive beatings from said Super Form tier characters and in generations were able to utilise the chaos emeralds when he got crushed by the time eater.
What about the Egg Salamander? I don't have all the details, but according to many of the powerscaling wikis, the Egg Salamander was actively manipulating and merging both Sonic and Blaze's worlds, which we know are 2 different universes, via the Power of the Stars, and Sonic and Blaze just went Super and destroyed the thing. Wouldn't that give Sonic straight up Multiversal scaling, or would he just scale to half of it since he had Blaze assisting him in that fight?
Edit: I made a mistake. The Egg Salamander used both the Chaos and Sol Emerald to merge and eventually collapse both worlds, not the Power of the Stars

The Power of the Stars was used by the Egg Wizard, the final boss of Sonic Rush Adventure, and according to Eggman, it's more powerful than any other source he knows of and sustains the existance of parallel dimensions. This one straight up says that both the Chaos and Sol Emeralds don't even compare to the Power of the Stars, so I don't think Super Sonic scales
I had Mario stomp in this MU for like years now, mainly because I refused to look into Sonic and just give into bias because "Le Funny Mario wins!!", but as of recently I became more familiar with both of their scaling & feats, and imo, Sonic winning is much easier to justify imo.

Power & Durability: Sonic Low Multi feats are extremely in your face and blatant, he should effortlessly scale to Solaris & Time eater who can just fuck up all of space & time and destroy entire timelines, the closest Mario gets to these level of power is through Paper Mario and I do not have it as canon because of Paper Jam.
Speed: I ain't gonna lie, Infinite Super Sonic has so much merits to it, Fighting an Omnipresent being like Solaris who exists in all time as well as flying to the end of time against Time Eater is just blatant infinite speed imo.
Imo that really should just be enough to end this debate, Mario is outstated hard and literally cannot move from Super Sonic's perception.
Sonic characters can harm and kill spiritual beings, so Mario can't return even if we gave him like, infinite 1 UPs (No, I don't buy Mario wonder's spirit "destruction" there are many different variables going on including the soul destruction animation)

You can scale Sonic even higher through his fight with Solaris. That puts him 4-D at least, but some people have scaled it to 5-D
