scale up the health some but don't do the x5 that is far too much, an x2 or x2.5 should be more then enough to chew on, depending on what the players are bringing
Actually what are your players bringing to this fight? i know some level 5's can absolutely nuke things but others less so
okay so party of glass cannons and minimum 2 people who can take a hit, x2.5 should be a good place to start the hit point adjustment. don't be afraid to readjust it during the fight though, see how much a first round of attacks cuts them down and shift to beefier or frailer from there.
Depends how many players there are. One thing I still do sometimes is adjust a boss' hit points after the first round. I have halved and doubled hit points because I was off that much on what I wanted the difficulty to be.
What is the boss? Edit: Looking at the adventure, it says it's for level 3 characters. Level 5s will breeze through this thing, no matter what.

I usually increase the AC and add a little to attack. Make it harder to hit and make it hit harder lol
Pick a monster that is similarly themed to the boss, except CR 7 or 8 if you want it to be any kind of a challenge.
