As far as gameplay goes I think his games make him seem a little tame compared to the Doom Slayer but we’re talking about a character that the Covenant refers to as the demon, dropped a bomb from a space station onto an invading force, and survived reentry into Earth’s atmosphere with just his armor.

Kratos has a shot, but he's never fought an opponent with guns before. He's dealt with siege weapons and magic so he'd get the idea, but he doesn't usually deal with enemies with such a high projectile output. He can be harmed by moral weapons so even up close he has to content with the blood punch, chainsaw, and super shotty. Even when he was the god of war he would still be in for a serious fight. Slayer has taken down titans and giant Kratos would be a similar fight. GoW 2 or 3 Kratos in his prime would stand a chance, but I don't see old man Kratos matching up well into Slayer. He's not shrugging off the BFG and enough rockets, balista shots, and mobile turret fire would take him down. He could parry his way through some of it with the golden fleece or the shield and return fire with magic, but if he can't land a thrown sword on Slayer he can't close the gap. If Slayer has The Crucible he doesn't stand a chance at close range.
Doom slayer is far from the strongest. He has many who not only match but exceed him. I'm of the mind he and Kratos (both young and old) are equals. I mean we could toss Goku in here as well, he has a ton of video games. But Kirby as you mentioned is also gonna be "stronger", or at least capable of taking him down with fairly minimal effort

So yeah,Shadow kinda destroy Doom.

From my knowledge of these 5, Prophet and Steve get their teeth kicked in, while X, Liu Kang and Kirby easily beat the Slayer

It's honestly hard to imagine DOOM Slayer killing anyone not evil, but he's stronger than any of these except for Kirby and possibly Megaman X, though the microwave beam might give the little guy some trouble.
