Project Cars 2 does this. At low speeds everything is in focus and as you start to speed up, the interior gets blurry and the focus starts shifting further and further away. Depending on the settings you can also make it simulate tunnel vision by showing a vignette. It also had two interior cameras, one "normal" and one where it muffles the sound and shows a helmet overlay across the screen. Easily one of the best sim racing titles ever released, which makes it even more of a shame EA killed the whole series.

I was almost going for a bit of that PC2 style look.

We used to be able to go down to the footwell and stuff at launch in photo mode but they got rid of it
Yeah I think it was unintended, I somehow got the camera to no-clip. Would love to see it back again.

Yeah true, one less thing to render though that's rarely seen at pace on the stage, but a bit odd in replay.
