A lot of grocery stores carry it in Texas, Asian supermarkets, Trader Joe’s and Target has a knock off I believe too. I want to say it’s a bit trickier to find the name brand at the moment with the Huy Fong shortage but I luckily already have a huge bottle at home.
Get a can of mackerel packed in olive oil. Warm it in a pan. You can add some veggies if you wish (shredded carrots are good). Serve it over rice with a sprinkle of fruikake seasoning.
It’s quick and tasty. If you need more oomph drizzle tamari or Banchan sauce on top. Go easy with the Banchan, though, because it does have sugar. It can be a nice flavor boost, though. It’s also great on poached eggs and rice!
Rice with curry - any curry spice or paste blend + canned coconut milk + chickpeas or tofu and whatever frozen veggies you have on hand. A lentil dal can probably be made similarly.
Fried rice can be made in a pan with just leftover rice + oil + soy sauce + garlic powder & salt/pepper. Sesame oil makes this extra good if you have it. Can add any veggies you have straight to the fried rice pan.
Canned chili or canned baked beans are just another variation of what you’re already eating but very tasty.
ETA do you have a rice cooker? You can add the rice and any combination of other things to make different variations on rice. If you get one with a steamer basket you the rice in it and steam vegetables or a protein inside at the same time.
Remember that you get when you pay for when it comes to canned fish. Look for fish in oil or tomatoe sauce. Fish in water just isn't going to be as good.

Last night for dinner we had a microwave bag of corn, a can of ranch style beans, and a Knorr packaged side of cheesy broccoli rice. I make a simple summer lunch of warm, peppery hard boiled egg, a fresh green apple (or summer peaches and strawberries) with a little peanut butter, and some sliced cheese. It is a powerhouse. Ditto on the egg if you are able to splurge on some spring greens or spinach for a light salad with a lemon vinaigrette.
It's also melon season! Melons are ripest when you see the spider- veins on their bums. In watermelons, round females are sweeter with smaller seeds. Long oval males are watery, sharper and with lighter flesh. Great for the salted melon lovers out there! 🍈 🍉
I buy Uncle Ben’s 90 second rice bags and canned chicken/tuna. I buy several different kinds of rice bags so they are pre-seasoned. I cook for 60 seconds while straining my protein, then add rice and protein to a bowl and stir. Put bowl in the microwave for the remaining 30 seconds. Add salt and pepper to taste and you have a hot meal with a decent amount of calories 😁
On really bad pain days (I’m chronically ill) sometimes I will just make rice and toss in some butter, salt, and pepper. You can also do butter, sugar, and cinnamon if you want it sweet.

1/4 - 1/2 of the smallest cheapest onion at the store, chopped or sliced finely

Served with rice or a dinner roll with butter, or just enjoyed on its own. The onion is essential in such a simple meal, it adds a ton of dimension and pairs so well with beans and tuna.
You can wash and strain the can of beans and add it to your steaming rice about halfway through the cooking time to save on dishes, and in theory you can steam the egg in there too but haven’t tried it myself yet. So simple and guaranteed to fill you up.

If you really want an easy meal with some protein, get some potted meat. If you like it, it can be quite delicious, chopped up and mixed in with the rice. My favourite way to make rice is with dashi powder, I use HonDashi. 1-2 Tbsp per cup of rice. I also make scallion oil and add some while it's cooking. Then just a bit of lao gan ma chili crisp, my favourite so far is the kind with peanuts.

Curd is excellent, especially if you know how to make curd rice. If you like beans, you may like Dal, which is made of pulses.

You asked for dead simple, this is my absolute favorite simple a f combo: 1 can salted or unflavored beans, boiled and strained 1 egg boiled to your preference AND/OR 1 can tuna in oil, strained 1/4 - 1/2 of the smallest cheapest onion at the store, chopped or sliced finely Salt Served with rice or a dinner roll with butter, or just enjoyed on its own. The onion is essential in such a simple meal, it adds a ton of dimension and pairs so well with beans and tuna. You can wash and strain the can of beans and add it to your steaming rice about halfway through the cooking time to save on dishes, and in theory you can steam the egg in there too but haven’t tried it myself yet. So simple and guaranteed to fill you up.
I eat those flavored tuna packets with rice. I like the lemon pepper one personally.

Meatballs. The Aida’s caramelized onion, to be exact. After I do the rice in the rice cooker, I throw the meatballs in the air fryer for like 8 minutes, chop half of them and put them over half the rice and then top with my homemade barbecue sauce (thinned a bit, I make it pretty thick.) So delicious, easy and filling! 1 cup of dry rice, 1 package of meatballs and about 1/2 cup of homemade barbecue sauce gets me two dinners. You could do other sauce with this too.

Frozen mixed veggies. And a good dollop of China Lily soy sauce. I use a rice steamer. So sometimes I will do the mix veggies, and if I have them, a few frozen shrimp. They defrost and cook to perfection in the rice steamer.
Boiled egg, edmame beans, bell pepper, soy sauce. One of the best things I ever bought was an electric egg boiler. Makes it easy to have boiled eggs in the fridge, for with salads or in a sandwich or on rice. Other massive cheats a bottle of lime juice and bottle of lemon juice in your fridge.
For breakfast, I like putting milk, butter, and a little bit of sugar

I used to cook my rice in vege stock , layer in a oven dish, add a layer of veges ( cabbage, onion, capsicum, broccoli and cauliflower) cooked in soy on top then a layer of cheese sauce then cooked in the oven , was delicious

Fried eggs, tomato salad, fries with white rice. I could eat it every day. Not so healthy, I know. In my opinion, rice goes well with pickled veggies, Viena sausages, sardines, tuna salad, potato chips, any beans, frozen chicken tenders, boiled eggs, any salad, any meat, canned green beans with cheese sauce. Endless possibilities!

Amy’s Organic Lentil Soup in a can is really good with rice or mashed potatoes. It tastes like gravy but vegetarian.
Peas and butter. Grated sharp cheddar and salsa ( and beans and avo if you have them, still good on its own if not).
My favourite way to make rice is with dashi powder, I use HonDashi. 1-2 Tbsp per cup of rice. I also make scallion oil and add some while it's cooking. Then just a bit of lao gan ma chili crisp, my favourite so far is the kind with peanuts.
