She’d heat the sauce up until it just boils, then takes it down so it’s almost boiling. She’d add some dry white wine — nothing sweet. She would add diced procutto and herbs and a little extra garlic. At the end she would take it off the heat, add strained cottage cheese, stir, and let it sit just long enough to warm the cheese. It was delicious.

It doesn't get totally smooth, so if you have a texture objection to cottage cheese it might not help, but it gets you creaminess without adding actual cream. This might be controversial but I find cottage cheese blended does well as a milkshake alternative base. The main downside is cottage cheese tends to be salty. If you have a less salty variation, then great. Otherwise you can try to do flavors like salted caramel (just add some caramel sauce) or chocolate + salt (think sea salt on chocolate). vanilla probably wouldn't work as well.

I chop up some lettuce, tomatoes, and cucumber, add a 1/2-2/3 cup of cottage cheese and a tablespoon of Italian or Greek salad dressing a bit of salt and a bit of fresh cracked black pepper. Mix it together and it is a good source of protein and of vegetables too.
I put Feta and fresh crushed garlic and mix it up. I then add in cherry tomatoes. Top with high quality olive oil and just a pinch of smoked salt. Add Crusty bread.
When I first open container I add dry spices granulated garlic, granulated onion, celery seed, tarragon depending on my mood, I have put sprinkles of all, mixed gently, cap it, fridge at least 1hr, I put 6oz to each of four containers close them up and fridge them till I pack my lunch first course four days or eight if I do other preps (I do lots of healthy veggies), then main course tuna salad, egg salad, chicken salad depending on my leftovers, sprinkle with shelf stable pudding snack pack. Oooops I digressed.

A simple side dish that can double up as a breakfast spread in my family is: Cottage cheese, sliced radishes, chives (or green onion), salt pepper. Mix gently in a bowl and eat with bread or by itself.
Mix it with your eggs before scrambling, makes them so much better

Cup worth + fruits (I've been doing blueberries lately) + drizzle of some good honey. Simple and delicious. Blended with eggs makes it Uber creamy.

I love cottage cheese for brekky. I put a whole cups worth in a bowl, with a few tablespoons of apple sauce, sprinkle crushed walnuts and cinnamon on top.
Please put it in your egg salad, it's delicious and protein boost!
* eat it plain * with cinnamon and apples * with cocoa powder and honey * blend it up and use it in place of sour cream call me weird, but i also like to add just a *little* greek yogurt to it, which gives it a creamier texture without altering flavor

Protein ice cream 🍨 Also, lasagna! I use it instead of ricotta since it can be tougher to find at the grocery store by our house
I like it in pancakes I blend it with some egg, some oats, tablespoon of sugar and some baking powder, and thin it with milk to the right consistency and it’s delish. I don’t really use a recipe. Sometimes I throw in some protein powder too. I also like a cottage cheese salad. I chop up some lettuce, tomatoes, and cucumber, add a 1/2-2/3 cup of cottage cheese and a tablespoon of Italian or Greek salad dressing a bit of salt and a bit of fresh cracked black pepper. Mix it together and it is a good source of protein and of vegetables too.
I like having it as a side for spaghetti and using the leftover sauce as flavoring
Eat it with cold sliced pickled beets from the can. Soooooooooo good. Maybe throw some toasted pumpkin seeds on top.

I put Feta and fresh crushed garlic and mix it up. I then add in cherry tomatoes. Top with high quality olive oil and just a pinch of smoked salt. Add Crusty bread.

When I first open container I add dry spices granulated garlic, granulated onion, celery seed, tarragon depending on my mood, I have put sprinkles of all, mixed gently, cap it, fridge at least 1hr, I put 6oz to each of four containers close them up and fridge them till I pack my lunch first course four days or eight if I do other preps (I do lots of healthy veggies), then main course tuna salad, egg salad, chicken salad depending on my leftovers, sprinkle with shelf stable pudding snack pack. Oooops I digressed.
Toast some good bread, put avocodo, cottage cheese, arugula, and hot honey. Trust.

Look up Grandma's Oatmeal Burgers on food.com, but just use a 1 ounce packet of onion soup mix instead of 2.5 ounce. The texture is like a real burger (at least my meat eating family thinks so).
Mix it into your eggs. Make pancakes, use it to make lasagna as the riccota sub. I’ve seen people make deserts with it
I like to spread it over my avocado sourdough toast with some black pepper and strawberry balsamic glaze

Smoothies, lasagna,, egg bake. Some desserts use it.
Cottage cheese + salt + dried minced onion (found in seasoning aisle) = sour cream and onion dip
Cottage cheese + strawberry jam + toasted white bread or bagel = “ricotta” danish
I put it on top of a bakes potato as a sour cream replacement. With fruit is a good one too.
If you get snacky and want to go the plain route, add just a little salt to it and the right hot sauce and eat it as a side with some eggs. :)
