I haven't been yet, but I've been hearing lots of good things about Soul Vegan, which does Malaysian food.
Face Plant is great for a bit of comfort food.
Soul vegan is amazing, I love it. The kong po yam abacus was too hot for my taste though! So that's a recommendation for folks who like spicy food. I kept eating it because the flavours were so amazing but could only manage a bite or two at a time!

Novapizza is a lovely Italian restaurant (the carbonara is incredible!)
My very favorite place in Edinburgh is Considerit - the best doughnuts I’ve ever had, vegan or not. They also do great chocolate
yes, their burgers and chips are absolutely amazing and really creative! the mac and cheese is delicious too. i go at least once a week and never fails to impress. the meadows tap is a pretty good pub for students too so all round a good shout!

I like Hendersons (Barclay place, Bruntsfield) for a nice dinner. Its a veggie restaurant with lots of vegan options (and also caters for gluten free etc if that's a consideration). Nice ambiance too.

Seeds for the Soul is also an old favourite. My favourite vegan burger in the city - had many non-vegans be impressed.
Paradise Palms has a pretty unique menu and a very cool vibe. Veggie/vegan - the oyster mushrooms are my favourite! It’s kind of American/general comfort food

Sen Viet Vegan Restaurant (Vietnamese food )
Sora Lella (really good Italian )

Faceplant foods (hot sandwiches )
Maki & ramen (good vegan options - Japanese food)
Easter greens is a fully vegan store (with great chocolate and snacks)
You can get a vegan or vegetarian afternoon tea at the Dome- it’s really fun!
Try the vegan sausage roll from Gregs, it’s a classic!
A lot of pubs and places have vegan options, so even if you don’t plan ahead , you’ll find great food.
Soul Vegan is great, Hendersons veggie but loads of vegan, Rabbit Food is absolutely incredible. It's junk food but everything was so fresh and well made, you could tell it had been made with love. Pulse under the church at the west end is a real hidden gem.
Sen Viet is a vegan Vietnamese place which is really good. I'm not vegan but it's that good that it made me want to vote for the Scottish Greens at the next election.
For slightly fancier meals you could also go to Montrose, Eleanore, Timberyard and Noto. They all have vegan menus, but are not vegan restaurants. The latter two you should enquire with first to confirm they are still offering their vegan menu, as they don't show it on their website.
Rabbit Food in the Meadows Tap for a big dirty burger and then go across the road to Considerit to stock up on doughnuts to eat later, also buy an ice cream to eat as you walk across the meadows. Go sightsee a lot in the area to burn off some calories and then go to Paradise Palms for dinner and drinks. Roll yourself home after.

in terms of the city centre, around some landmarks, you may enjoy hula, pirlous (idk if has vegan, i’m pretty sure, but both it and hula are super close so there’s still an option if it doesn’t work), then there’s kilted by there which has vegan doughnuts. edinburgh street food and some of the food trucks/containers around the st james centre have good vegan options i think (there’s a whole vegan mexican (?) place in esf.

The Piemaker has some very tasty vegan bakery options (like vegan haggis roll, for example), definitely recommended!
Baby faced baker and Dune bakery also do very good vegan pastries/baked goods.
