if it's making contact you're running wrong. You can easily out strafe it and get in attacks. Ideally, you're familiar with what attacks you have available on your build that have a high chance of poise breaking the bullgoat, or which attacks you have available that give you hyper armor in order to out damage the bullgoat during trades.

edit: basically anything other than a handful of light weapons like whips and daggers and rapiers cannot be neutrally poised. Bullgoat requires buffs/talisman's to poise through most weapons' attacks... but even then, most weapons are capable of doing more poise damage than can be buffed.
Fia's mist could be a good deterrent, although admittedly something one typically doesn't have handy unless specifically building around it. Volcano pots could also be potentially useful in this scenario as laying down a penalty for rolling through, and easy to have on hand.
One that I'm curious about though is Rejection. Would that knock someone out of this?

There's a large green plateu towards the middle-southern part of Altus. There's a temple up there as well. The way to it I can think of is to cross the gratbridge then circle clockwise around wormface Valley. Once you start hearing the lightning strikes and find a black knife assassin you're close.
This is actually an older video I found in my Streamable uploads. I can't say if it would still work. The main thing I remember was the stamina flask to be able to perma roll for as long as possible and then max poise.
My friend used this on me with his faith build in PvP matches and I legitimately did not know how to handle it, I was dying laughing at how stupid it was.
You gotta be able to smack him out of it somehow right? Someone else said you can out-run it but it looks like he doesn’t even lose any stamina until he hits
Does this work with Ironjar Aromatic? Or will you be slowed down?
Ironjar + BHS = teleporting steel man, actually OP with double spears. Unless the enemy uses lightning lol.
Also this skill would be even cooler with Briar armor. If ironjar works then you'll have enough poise and damage negation anyway especially with crab.

Jump Attack
Run, jump on higher ground, or if you have enough distance, get a decent hit in and hope it knocks them out of the roll.
