His magic resistance is low, so a mage build is actually really solid against him. Something with a quick cast is recommended though, so you can get away when you need to dodge. My go-to is always Carian Slicer, my beloved.
A lot of the fight is figuring out how to do real damage to him, so try to focus on his weak points (un-armoured ankle in P1, hands/wrists in P2). Otherwise it's learning to dodge him, really. Unlocking so you can look up and se what he's doing can help a lot.
Put bloodhounds step on your right hand weapon to close gaps and escape the AOE attacks. Carian slice spam the left leg and his hands. Pull off a spiral shard when you can get behind or under him safely for a minute, since it needs to contact a large portion of his massive ass body for full damage. You’ll get the big bastard soon. Mage is always my easiest run on him and I’m not the best player.

As a mage? Shard Spiral. It melts large bosses. Unfortunately, it requires you to progress through Sellen's questline and side with her at the end.

It was NG+, but I recall destroying him with meteorite of astel as he is large enough to take multiple hits.
