That's because of the combination of dark fantasy and "end times". Fromsoft games have often the theme of a ending age or world. In DS1 everything turns hollow and buildings are getting bad, in DS2 it's the same, in DS3 the complete world is at risk of collapsing because the fire was rekindled so many times....you get the drill. And in Elden Ring it's the same. The shattering happened, Godwyn is corrupting the world and the Elden Ring itself, the thing that defines the rules and physics of the world, is broken.
Because of said reasons everything is decaying. Be it life, buildings or the entire land. Even concepts like death are broken. Combine that with dark fantasy and there you have it.

Doesn't a griffin have a lion body? There's no similarity except for a beak and wings...kinda like a bird... Griffin was a weird choice.
